Japanese Soup (Zosui)

Ingredients

  • Chicken Broth 5 qt
  • Rice 5 oz
  • Crab Meat 15 oz
  • Farm fresh eggs 3 pieces
  • Salt to taste
  • Soy Sauce 2 tablespoons
  • Scallions to taste

Step-by-Step Guide

Step 1

Boil the rice in unsalted water. Rinse. Allow the water to drain.

Step 2

Cut the crab meat (or crab sticks) along the fibers into large pieces.

Step 3

Heat the broth. Add the rice to it. Bring to a boil.

Step 4

Once the broth has boiled, it needs to be salted. However, keep in mind that the soy sauce added at the end can also be quite salty.

Step 5

Add the crab meat, breaking it into strands a little. Let it simmer for 5–7 minutes.

Step 6

Beat the 3 eggs until smooth and, while constantly stirring, pour them into the boiling soup. Once the eggs are fully set, stop stirring and turn off the heat. Cover the soup with a lid for 10 minutes.

Step 7

When serving, add soy sauce and green onions to each bowl.
