Japanese Chicken Broth
Ingredients
- Chicken bones 0 lbs
- Pork Blood 10 oz
- Onion 1 head
- Turnips 2 pieces
- Leek 4 stalks
- Grated Ginger Root 0 oz
- Salt 2 teaspoons
- Chinese green beans 4 pieces
- Sugar 2 teaspoons
- White Pepper (whole) a pinch
- Dashi powder 1 teaspoon
Step-by-Step Guide
Step 1
Place the meat bones in a large pot, cover with cold water, and bring to a boil. Reduce the heat and simmer for 2 hours, skimming off the foam.
Step 2
Then add the vegetables and another 1 liter of water, bring to a boil, reduce the heat, and simmer for another hour. Remove from heat and let cool. Strain the broth, return to heat, and simmer for another hour on low heat.
Step 3
Add salt, sugar, pepper, and dashi broth.
