Prepare the necessary ingredients.

Place the egg yolks in a metal bowl.

Add sugar.

Add Marsala wine.

Mix the contents of the bowl. Bring the water in the pot to a boil, then reduce the heat and place the bowl with the yolk mixture on top.

Immediately start whisking the mixture, moving the whisk from bottom to top to incorporate air into the sabayon. You must whisk constantly, never leaving the double boiler, or else the egg yolks may cook from the hot syrup of wine and sugar, resulting in lumps, which should be avoided.

When the sabayon begins to thicken, the whisk will leave trails on the surface of the mixture. To check for readiness, stop and count to eight; if the trails disappear in no less than eight seconds, the sabayon is ready.

Remove the bowl from the heat and continue whisking for another 2–3 minutes, while the bowl cools.

Place one cookie in each serving glass.
