Italian Tomato Pie
Ingredients
- Puff Pastry 15 oz
- Goat cheese 10 oz
- Eggplants 2 pieces
- Yellow Cherry Tomatoes 6 pieces
- Thyme ½ bunch
- Spanish onions 2 heads
- Sweet Pepper 1 piece
- Garlic 2 cloves
- Olive Oil 2 tablespoons
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
In a bowl, mash the cheese, thyme, and crushed garlic. Season with salt and pepper.
Step 2
Place the rolled-out pastry in a greased baking dish.
Step 3
Prick the pastry with a fork to prevent it from puffing up. Then, carefully spread the cheese mixture over the entire surface.
Step 4
Slice the eggplants into rounds. Sprinkle with coarse salt and let sit for about 20 minutes.
Step 5
Place in a colander and press down with a heavy plate to remove excess moisture. Then, layer them on the pastry.
Step 6
Slice the onion into half rings (shallots can also be used). Distribute over the entire surface of the pie.
Step 7
Layer the sliced tomatoes (overlapping) on top. Sprinkle with diced pepper. Top with thyme leaves, and season with salt and pepper.
Step 8
Bake for 40 minutes in a preheated oven at 355°F.
Step 9
Serve warm, optionally garnished with fresh herbs.
