Italian Sausage Soup

Ingredients

  • Olive Oil 1 tablespoon
  • Sausages 15 oz
  • Onion 2 heads
  • Garlic 2 cloves
  • Chicken Broth 30 fl oz
  • Baking Tomatoes 30 oz
  • Pasta (corkscrew) 5 oz
  • Canned Baby Beets 10 oz

Step-by-Step Guide

Step 1

Sauté the sausages in a pot until they are browned. Transfer the sausages to a bowl.

Step 2

In the same pot, sauté the chopped onion in oil until it turns golden. Add the finely minced garlic and cook for another minute, then add the crushed tomatoes.

Step 3

Add chicken broth, bring to a boil, reduce the heat, cover with a lid, and simmer for 25 minutes.

Step 4

Add canned white beans, sautéed sausages, and pre-cooked small pasta to the soup. Serve hot, optionally with Parmesan cheese.
