Italian lemon granita
Ingredients
- Water 25 fl oz
- Sugar 5 oz
- Salt a pinch
- Meyer Lemon Juice 10 fl oz
- Lemon 1 piece
Step-by-Step Guide
Step 1
Combine 2 cups of water with sugar in a saucepan and bring to a boil over medium heat. Cook, stirring constantly, until the sugar is completely dissolved. Add salt, mix well, and remove from heat.
Step 2
Add the remaining water and let it cool to room temperature. Then cover it and place it in the refrigerator for one hour.
Step 3
In the meantime, place a container for the granita with a capacity of about 2.5 liters in the freezer. Mix the syrup with lemon juice and the zest of one lemon until smooth. Pour the mixture into the chilled granita container and return it to the freezer for 30-60 minutes.
Step 4
Stir the partially frozen granita and return it to the freezer. Repeat every 30 minutes for about 3 hours.
Step 5
Serve the finished granita in chilled dessert cups or glasses.
