  • Wheat Flour ¾ cup
  • Polenta ¾ cup
  • Sugar ¼ cup
  • Baking Powder 1 teaspoon
  • Salt a pinch
  • Whole egg 3 pieces
  • Butter 0 oz
  • Lemon 1 piece
  • Raisins 5 oz

Step-by-Step Guide

Step 1

Mix the sifted flour, polenta, zest of 1 lemon, salt, and baking powder. Make a well in the center, pour in the melted butter and the egg yolks whipped with sugar, add the soaked and finely chopped raisins, and knead the dough. Roll the dough into a ball, then into a log on a floured surface, wrap the log in plastic wrap, and refrigerate for 1 hour.

Step 2

Remove the firm dough from the wrap and cut the log into cookie rounds about 1 cm thick. Place the cookies on parchment paper and bake in a preheated oven at 340°F for 12 minutes until golden. Remove and cool.
