Italian Chickpea Soup
Ingredients
- Vegetable Broth 4 cups
- Onion 1 head
- Garlic 3 cloves
- Bay leaf 1 piece
- Dried thyme leaves 1 teaspoon
- Dried Oregano 1 teaspoon
- Cayenne Pepper 0.1 teaspoons
- Canned chickpeas 15 oz
- Sweet potatoes 4 pieces
- Celery root 1 piece
- Dijon Mustard 1 tablespoon
- Chopped Parsley ⅓ cup
Step-by-Step Guide
Step 1
In a large pot, pour in the broth and 2 cups of water, add the onion, garlic, bay leaf, thyme, oregano, and cayenne pepper, and bring to a boil. Cook for 5 minutes.
Step 2
Add the chickpeas, sweet potatoes, celery root, and mustard, and cook for another 10-12 minutes until the vegetables are very soft.
Step 3
Mash the vegetables and chickpeas into a puree with chunks using a large spoon or a masher.
Step 4
Mix in the parsley, and season with salt and pepper to taste.
Step 5
Before serving, garnish with sprigs of parsley.
