  • Beef 25 oz
  • Radish 5 oz
  • Garlic 4 cloves
  • Ginger 0 oz
  • Leek 2 pieces
  • Celery salt 3 pieces
  • Salt to taste

Step-by-Step Guide

Step 1

Clean the tripe, rinse it, and boil it in salted water. Cut into cubes.

Step 2

Rinse the beef, cover it with cold water, and bring to a boil. Skim off the foam and cook until the meat is tender.

Step 3

Remove the meat and cut it into cubes.

Step 4

Strain the broth and bring it back to a boil. Add the meat, tripe, garlic, and ginger.

Step 5

Grate the radish.

Step 6

Slice the celery into thin rings.

Step 7

Add the radish and celery to the broth.

Step 8

Slice the shallots into thin rings and sauté them in vegetable oil, then drizzle with vinegar.

Step 9

Add to the broth. Season with salt.
