Indonesian Black Rice Pudding

Ingredients

  • Black rice (imperial) 10 oz
  • Palm Sugar 5 oz
  • Vanilla Pod 1 piece
  • Water 25 fl oz
  • Coconut Liqueur 10 fl oz
  • Salt to taste

Step-by-Step Guide

Step 1

Soak the rice for at least 8 hours, preferably overnight.

Step 2

In a pot with water, add the soaked rice and the cut vanilla pod (no need to peel). Cook for 45 minutes until the mixture starts to thicken. If the water evaporates too quickly, feel free to add more.

Step 3

Gradually add the sugar and mix the pudding well. Add salt to taste.

Step 4

Cook until the pudding reaches a consistency similar to thick rice porridge.

Step 5

Let it cool slightly. Pour over the coconut cream. Serve warm. Divine!
