Indian Spinach and Chickpea Pancakes
Ingredients
- Chickpea 1 cup
- Corn Starch ¼ cup
- Baking Powder ¼ teaspoon
- Toasted Cumin Seeds 1 teaspoon
- Cayenne Pepper ¼ teaspoon
- Coarse Salt to taste
- Onion ½ head
- Chickpea 1 cup
- Frozen spinach discs 10 oz
- Grated Ginger Root 1 tablespoon
- Lime and chili chutney to taste
- Vegetable Oil to taste
Step-by-Step Guide
Step 1
In a bowl, mix chickpea flour, cornstarch, baking powder, cumin, cayenne pepper, and ¾ teaspoon of salt. Add ⅔ cup of water and mix well. Add finely chopped onion, chickpeas, thawed spinach, and ginger. Stir to combine.
Step 2
Heat vegetable oil in a large skillet. Fry small pancakes in batches until golden brown. Season with salt.
Step 3
Serve with mango chutney.
