Indian Soup (Dal)
Ingredients
- Ground coriander 1 bunch
- Mung Beans 5 oz
- Water 6 cups
- Ghee 2 tablespoons
- Ginger 2 tablespoons
- Toasted Cumin Seeds 1 teaspoon
- Mustard Greens 1 teaspoon
- Asafetida a pinch
- Curry 7 pieces
- Turmeric 1 teaspoon
- Garam Masala 0.4 teaspoons
- Black Salt to taste
Step-by-Step Guide
Step 1
Soak the mung beans overnight or for at least a couple of hours. Before cooking, rinse them, add 4 cups of water, and cook over medium heat for 30 minutes. Then add more water and cook until the beans turn into a puree.
Step 2
Before adding the second portion of water to the mung beans, finely chop the ginger and cilantro.
Step 3
While the beans are cooking, heat a small skillet, melt 2 tablespoons of ghee, add the cumin and mustard seeds (you can also add fennel, ajwain, or fenugreek), and when the seeds start to crackle, add the finely chopped ginger, curry leaves, asafoetida, turmeric, and garam masala. Sauté for 2–3 minutes.
Step 4
Pour the contents of the skillet into the pot, add the cilantro, and after a minute, turn off the heat. Cover with a lid, and after 5 minutes, the dal is ready to serve.
