Indian Pudding
Ingredients
- Butter 5 oz
- Milk 1⅖ l
- Brown Sugar 5 oz
- Grated Ginger Root 0 oz
- Vanilla Pod 1 piece
- Corn Starch 5 oz
- Light Molasses 1 tablespoon
- Maple syrup 1 tablespoon
- Cinnamon 1 piece
- Vanilla Ice Cream to taste
Step-by-Step Guide
Step 1
Preheat the oven to 320°F. Grease 100 ml molds with butter. In a saucepan, combine milk, grated ginger, and vanilla seeds, and bring to a boil. Immediately remove from heat and let sit for ten minutes. Strain through a sieve, discarding the ginger. Pour the milk back into the saucepan, add sugar, cornstarch, molasses, syrup, and a cinnamon stick split in half. Bring to a boil and simmer for fifteen minutes. Remove from heat, stir in the butter, and discard the cinnamon.
Step 2
Pour the mixture into the molds, place them on a baking tray, and put them in the oven. Bake for about an hour until the edges of the pudding are set, while the center remains soft. Let it cool for ten minutes.
Step 3
Serve with ice cream.
