  • Vegetable Oil 0 fl oz
  • Butter 0 oz

Step-by-Step Guide

Step 1

For the filling of the khachapuri, combine 400 grams of sulguni cheese with 100 grams of imereti cheese. Grate the cheese, mix it with a fresh chicken egg, and add 3 grams of flour.

Step 2

Now let's prepare the dough: mix 500g of all-purpose flour, 5g of sugar, 5g of dry yeast, and 11g of salt. Gradually pour in 400ml of low-fat milk, add 10g of vegetable oil and 30g of melted butter. Knead the mixture again, cover it with plastic wrap, and let it rest for about forty minutes. Once the dough has risen, you'll need to add a bit more vegetable oil and knead again.

Step 3

Divide the dough into 50-gram portions, roll them out, and place 40 grams of filling in the center. Fold the edges around the filling and shape it in the center. Roll it out again and place it on a baking sheet.

Step 4

Bake the mini khachapuri for 10-13 minutes at a temperature of 300-360 degrees Fahrenheit. Brush the finished khachapuri with butter.
