Ingredients

  • 3.2% Milk 5 fl oz
  • 10% cream 5 fl oz
  • Sugar 5 oz
  • Brown Sugar 5 oz
  • White Beans ½ piece
  • Cinnamon 5 pieces
  • Ground Cinnamon 1¼ teaspoons
  • Wheat Flour 3 tablespoons
  • Corn Starch 3 teaspoons
  • Butter 1 tablespoon
  • Semi-soft cream cheese 0 oz

Step-by-Step Guide

Step 1

For the cinnamon sauce, combine the brown sugar and flour in a saucepan, add 180 ml of hot water, place over medium heat, and cook for 5 minutes until slightly thickened. Add the butter and cook for another 5–6 minutes. Remove from heat, stir in ¾ teaspoon of ground cinnamon, and cool. Transfer to an airtight jar until use.

Step 2

Dissolve the cornstarch in 50 ml of milk and let it sit for a couple of minutes.

Step 3

For the ice cream, in a small saucepan over medium heat, combine the cream, remaining milk, regular white sugar, salt, vanilla seeds and the pod, ½ teaspoon of ground cinnamon, and broken cinnamon sticks. Stir, bring to almost a boil, remove from heat, cover, and let sit for 1 hour. After that, strain to remove the spices, return the milk-cream mixture to medium heat, pour in the cornstarch milk, and cook while stirring constantly until thickened. Remove from heat, add the cream cheese, and mix until smooth. Cool to room temperature, then refrigerate overnight.

Step 4

Freeze in an ice cream maker according to the instructions, adding previously chopped small pieces of classic cinnamon roll with cream cheese frosting (half of a standard-sized roll). Transfer the finished ice cream to a container, layering it with the cinnamon sauce (7-8 teaspoons). Place in the freezer for at least 5 hours before serving.
