Hungarian Mushroom Soup
Ingredients
- Butter 2 tablespoons
- Onion 1 head
- Fresh Mushrooms 10 oz
- Chopped Green Onions 2 teaspoons
- Paprika 1 tablespoon
- Soy Sauce 1 tablespoon
- Chicken Broth 2 cups
- Milk 1 cup
- Wheat Flour 3 tablespoons
- Salt to taste
- Ground Black Pepper to taste
- Meyer Lemon Juice 2 teaspoons
- Sour Cream 5 tablespoons
- Chopped Sage Leaves ¼ cup
Step-by-Step Guide
Step 1
Melt the butter in a pot and add the finely chopped onion. Sauté for 5-7 minutes until soft. Then add the thinly sliced mushrooms and sauté for a few more minutes until soft.
Step 2
Add the dill, soy sauce, paprika, and pour in the broth. Bring to a boil, reduce the heat, cover, and simmer for 15 minutes.
Step 3
In a small bowl, mix the milk and flour. Pour the mixture into the soup, cover, and cook for another 15 minutes.
Step 4
Add the lemon juice, season with salt and pepper. Remove from heat and stir in the sour cream and parsley. Mix well and serve.
