Hot Buns with Raisins
Ingredients
- Brown Sugar 5 oz
- Wheat Flour 25 oz
- Dry yeast 0 oz
- Spices 1½ teaspoons
- Ground Cinnamon 1 teaspoon
- Nutmeg 1 teaspoon
- Milk 10 fl oz
- Butter 5 oz
- Chocolate eggs 2 pieces
- Raisins 5 oz
- Citrus Zest Mix 0 oz
- Orange zest 0 oz
Step-by-Step Guide
Step 1
In a bowl, add the yeast and a pinch of sugar, pour in 125 ml of warm water, mix and let it sit for 10 minutes. Combine 625 grams of flour, spices, and 0.5 teaspoons of salt. Mix the milk, softened butter, 80 grams of sugar, eggs, and 125 grams of the flour mixture, and blend everything with a mixer for 1 minute. Add the yeast mixture, raisins, and zest, and mix well. Gradually add 125 grams of the flour mixture while stirring.
Step 2
Grease a bowl with oil and transfer the dough there, turning it a few times to coat it with oil, cover with plastic wrap, and let it rise for 1.5-2 hours until it doubles in size.
Step 3
Punch down the dough and transfer it to a floured surface. Divide into 16 portions, shape into balls, and place them on a greased baking sheet. Cover with a towel and let rise for 30 minutes.
Step 4
Preheat the oven to 355°F. For the glaze, mix 2 tablespoons of brown sugar and 2 tablespoons of water in a saucepan. Bring to a boil over high heat and remove from heat.
Step 5
Place 60 grams of flour in a bowl and add 3 tablespoons of water, mixing until it forms a dough. Roll out the dough on a floured surface to a thickness of 2 mm and cut into strips that are 5 mm wide and 12 cm long. Brush the strips with water and attach 2 pieces in a cross shape on each bun. Bake for 15-20 minutes until golden brown. Brush the hot buns with the glaze.
