Homemade Vanilla Marshmallows

Ingredients

  • Sugar 20 oz
  • Gelatin 1 tablespoon
  • Citric Acid ½ teaspoon
  • Vanillin to taste
  • Water 5 fl oz
  • Activated Baking Soda ⅓ teaspoon

Step-by-Step Guide

Step 1

Soak the gelatin in about 50 ml of cold water for 2 hours.

Step 2

At the same time, soak the sugar in 100 ml of cold water for 2 hours as well.

Step 3

Then, place the sugar over heat; once it boils, simmer on low heat, stirring constantly, for 7–8 minutes.

Step 4

After that, remove the sugar from the heat.

Step 5

Add the gelatin to it and beat with a mixer for 10 minutes.

Step 6

Beat on low speed, preferably on the lowest setting. Add the citric acid and beat for 5 minutes.

Step 7

After that, add the vanillin and baking soda and beat for another 5 minutes. Using a pastry syringe, pipe the mixture onto a baking sheet lined with parchment paper and place it in the refrigerator (or a cool place) for 3–4 hours.

Step 8

Afterward, join the halves together, and if desired, drizzle with melted chocolate or sprinkle with powdered sugar.
