Homemade Pink Marshmallow

Ingredients

  • Antonovka apples 5 pieces
  • Red Grape Juice 3 tablespoons
  • Sugar 15 oz
  • Egg white 1 piece
  • Agar-Agar 1½ teaspoons
  • Rose water 1 tablespoon
  • Water 3 tablespoons
  • Powdered Sugar 3 tablespoons

Step-by-Step Guide

Step 1

Soak the agar-agar in a mixture of rose water and plain water.

Step 2

Remove the seeds from the apples and bake until soft in the oven at 355°F, let cool slightly, blend into a puree, and strain through a sieve.

Step 3

Add raspberry juice and 300 g of sugar to the apple puree, and beat with a mixer until the sugar dissolves.

Step 4

Place the soaked agar-agar on the stove and heat to dissolve. Once fully dissolved, add 160 g of sugar and gradually bring to a boil, creating a syrup. Boil the syrup for 1 minute, then remove from heat.

Step 5

Add the egg white to the apple mixture and beat at high speed until fluffy and light pink, then slowly pour in the cooled sugar syrup while mixing at low speed.

Step 6

Line a baking tray or a flat rectangular mold with low sides with parchment paper (lightly greased with oil) or plastic wrap. Pour the apple mixture, smooth it into a layer about 2–3 cm thick, and leave at room temperature to set for 5–6 hours or overnight.

Step 7

Dust the top with powdered sugar, carefully remove from the mold and turn it over, dusting with powdered sugar again. Cut into small cubes or bars, and if desired, roll them again in powdered sugar.
