Homemade Mascarpone
Ingredients
- Lemon ½ piece
- 10% cream 15 fl oz
Step-by-Step Guide
Step 1
Pour the cream into a metal saucepan and heat it in a water bath (on low heat), stirring occasionally. The cream should be heated to 165°F. If you don't have a kitchen thermometer, heat it for about 10 minutes.
Step 2
Add the juice of half a lemon to the cream and continue to heat, stirring constantly. After about 5 minutes, the cream will start to curdle.
Step 3
Remove the cream from the heat and let it cool.
Step 4
Line a strainer with clean cheesecloth in 4-6 layers and pour the cream into it. Place it over an empty saucepan and let it drain.
Step 5
After about 2-3 hours, you will have delicious homemade mascarpone in the strainer. Transfer it to a clean glass or plastic container and store it in the refrigerator.
