Homemade herring preserves
Ingredients
- Herring 4 pieces
- Black tea 10 fl oz
- Chicken Broth 1 cup
- Vegetable Oil ⅔ cup
- Bay leaf 2 pieces
- Green peppercorns 12 pieces
- Salt 1 teaspoon
- Scallions to taste
Step-by-Step Guide
Step 1
Thaw the herring, remove the heads, and cut into large pieces of equal width.
Step 2
Place the bay leaf and pepper at the bottom of a small pot, then arrange the herring vertically (like sardines in a can).
Step 3
Mix the cooled tea, broth, salt, and oil.
Step 4
Pour over the herring. Bring to a boil over high heat, then reduce the heat to low and simmer covered for 2 hours (add water or broth if necessary).
Step 5
Cool down. When serving, sprinkle with green onion.
