Homemade citrus shortbread cookies
Ingredients
- Butter 5 oz
- Farm fresh eggs 3 pieces
- Sugar 1 cup
- Wheat Flour 3 cups
- Meyer Lemon Juice 5 fl oz
- Activated Baking Soda a pinch
Step-by-Step Guide
Step 1
Grate the softened butter or chop it finely.
Step 2
Add 2 eggs to the butter. Place the yolk of the third egg in a separate container for brushing the cookies.
Step 3
Pour the lemon juice or vinegar into a separate cup and dissolve the baking soda in it. Add it to the eggs with the butter.
Step 4
Mix everything and gradually add the flour. You may need a little more than 3 cups.
Step 5
It is advisable to place the dough in a plastic bag and refrigerate for 2 hours.
Step 6
After that, roll out the dough to a thickness of about 3-4 mm and cut out cookies using cookie cutters.
Step 7
Place on a baking sheet and brush with the egg yolk.
Step 8
Bake in the oven at 200-210°C for 10-15 minutes (until golden brown).
