Homemade Chicken Noodles
Ingredients
- Chicken offal 5 oz
- Chicken soup set 10 oz
- Chicken Egg 1 piece
- Wheat Flour 1 cup
- Butter 0 oz
- Onion 1 head
- Carrot 1 piece
- Orange Bell Peppers 1 piece
- Potato 1 piece
- Salad Potatoes 6 pieces
- Parsley to taste
- Dill to taste
- Bay leaf 4 pieces
- Salt to taste
- Ground Black Pepper to taste
- Ground clove to taste
Step-by-Step Guide
Step 1
Prepare the chicken offal: rinse under water, remove membranes and fat. Place them in a bowl. Rinse the soup set, remove the skin, and add it to the offal. Sprinkle with a little salt and pepper, and mix.
Step 2
Prepare the broth: pour cold water into a pot and add the contents from the bowl. Bring to a boil and reduce the heat. Remember to periodically skim off the foam. To make the broth clear, add a few drops of lemon juice.
Step 3
Make the noodles: take the flour, sift it into a dry bowl, and add a few pinches of salt. Make a small well in the flour and crack the egg into it. Knead the dough as you would for dumplings. No water! Then roll out the dough into a very thin sheet, so it is translucent. Dust generously with flour, roll it up, and cut it into thin strips. Separate the strips from each other, place them on a baking sheet or cutting board, and let them dry, turning them occasionally.
Step 4
Prepare the soup seasoning: melt the butter in a preheated skillet, add the carrot (grated on a medium grater or cut into circles), finely chopped pepper, and tomato, and only then add a small head of chopped onion. Sauté, stirring constantly, for about 5 minutes.
Step 5
Return to the broth: remove the contents, strain, and put it back on the heat. Add the potatoes, cut into cubes, and bring to a boil. Then add the soup seasoning, and after about 10–15 minutes, add the prepared homemade noodles to the boiling broth. Salt and pepper to taste.
Step 6
Check the soup's readiness: check the potatoes and all other ingredients. As soon as we understand that all the products are cooked, add a few bay leaves and finely chopped herbs. Let it simmer for a couple more minutes and then steep off the heat for a few minutes. Serve at the table.
