Homemade apple marmalade
Ingredients
- Apple 5 lbs
- Walnuts 10 oz
- Sugar 5 oz
- Grated Ginger Root 0 oz
- Cinnamon 3 pieces
- Rosemary 3 stalks
Step-by-Step Guide
Step 1
Prepare the apples: peel them, remove the seeds, but do not discard them. Cook the peels and seeds for forty minutes to an hour with a small amount of water over low heat, covered. Strain through a sieve.
Step 2
Add the prepared pectin to the peeled apples and cook everything together for about twenty minutes, until the apples soften. Then blend until smooth, adding sugar and spices if desired, and cook over the lowest heat, uncovered, for about three hours, stirring occasionally.
Step 3
Pour the jelly onto baking trays lined with parchment paper, spreading it to a thickness of about 1.5 cm. Then, press halved nuts into the puree. Dry in the oven at a temperature of 50–140°F on convection mode until completely dry (flip once to the other side) — for at least six hours.
