Description
Herb breadsticks are a delightful appetizer that pair perfectly with soups and salads. These crispy, flavorful sticks are made with fresh herbs and a hint of garlic, making them a favorite at any gathering. Serve them warm with a side of marinara sauce or olive oil for dipping.
Ingredients
- Wheat Flour 20 oz
- Dry yeast 0 oz
- Rosemary 0 oz
- Thyme 0 oz
- Olive Oil 0 fl oz
- Grated Pecorino Pepato Cheese 5 oz
- Garlic 4 cloves
- Parsley 1 bunch
- Salt ¾ spoons
- Ground Black Pepper ½ spoons
Step-by-Step Guide
Step 1
Mix the yeast with 2 tablespoons of flour and dissolve it in half a cup of warm water. For better fermentation, you can add a pinch of sugar. Cover it with a towel and place the mixture in a warm spot for ten minutes.
Step 2
In a large bowl, combine 3 cups of flour, pour in the starter, and add another 1.5 cups of warm water. Knead the dough, gradually adding more flour, until it reaches a smooth, elastic, yet soft consistency. When the dough no longer sticks to your hands, shape it into a ball, dust it with flour, cover it with a towel, and place it in a warm spot to rise until it has doubled in size.
Step 3
Remove the leaves from all the herbs and chop them finely. You should have a tablespoon each of thyme and rosemary, and three to four times that amount of parsley. In one bowl, mix the herbs with a quarter of the parmesan, half a teaspoon of salt, and a quarter teaspoon of pepper. In another bowl, combine the oil, finely chopped garlic, and a quarter teaspoon each of pepper and salt.
Step 4
Punch down the risen dough and divide it into two parts. Place one part back under a towel, and roll the other out into a rectangle measuring 25 by 30 cm. Evenly sprinkle the herbs over the dough, fold it in half, and roll it out slightly. Cut the rectangle into strips no wider than 2 cm and twist them into spirals. While you are twisting one, cover the others with a towel to prevent them from drying out.
Step 5
Grease a baking sheet with oil, arrange the sticks on it with a 2 cm gap between them, and brush them with garlic oil. Let them sit for about ten minutes, meanwhile repeat the same steps with the second portion of the dough.
Step 6
Bake the sticks in a preheated oven at 390°F for twenty to twenty-five minutes. If you have two baking sheets, switch their positions after fifteen minutes.
Step 7
Brush the browned sticks with garlic butter and coat them in a mixture of parsley and the remaining Parmesan.
