There's also an option to melt the chocolate using a double boiler and then incorporate it into the mixture. I should mention that I haven't tried this method, so feel free to experiment at your own risk ;)

  • Butter 5 oz
  • Sugar 5 oz
  • Vanilla salt 0 oz
  • Wheat Flour 10 oz
  • Cocoa Powder 0 oz
  • Baking Powder 2 spoons
  • Salt a pinch
  • Chicken Egg 2 pieces
  • Milk 5 fl oz
  • Chocolate 5 oz

Step-by-Step Guide

Step 1

Pour hot water into a medium bowl, then place a larger bowl on top. Add the butter to the larger bowl, and sprinkle sugar and vanilla sugar on top. Wait for 5 minutes to allow the butter to soften.

Step 2

While the butter is softening, sift the flour with the cocoa powder, and add the baking powder and salt. You can do this several times to make the batter fluffier.

Step 3

Cream the softened butter with the sugar. Add the eggs and beat with a mixer. The fewer lumps there are, the better.

Step 4

Now is the perfect time to preheat the oven to 375°F.

Step 5

Gradually add the flour mixture. It's best to mix with a whisk. When the dough becomes too thick to stir, slowly add the milk and continue mixing.

Step 6

Finally, add the chocolate, cut into small pieces. To prevent the chocolate from sinking to the bottom, mix the batter before pouring it into the mold.

Step 7

Pour the batter into the molds. Personally, I used paper molds placed inside silicone ones. Sprinkle with a mixture of sugar and cinnamon on top, but this is optional.

Step 8

Place the muffins in the oven for 20 minutes. The key is to REMOVE THEM IMMEDIATELY AFTER 20 MINUTES, as otherwise they will dry out and won't be very soft.
