- Poultry 5 lbs
- Celery stalk 2 pieces
- Carrot 2 pieces
- Onion 1 head
- Green peppercorns to taste
- Salt to taste
Step-by-Step Guide
Step 1
In a large pot, place the chicken, sliced carrots, chopped celery, a few peppercorns, and salt to taste. Bring to a boil and cook for 5 minutes, skimming off the foam.
Step 2
Reduce the heat and simmer, partially covered, for 2-3 hours.
Step 3
Cool the broth to a warm state and strain through cheesecloth or a fine sieve.
