Description
Shiitake mushrooms can be used fresh or dried. Dried mushrooms should be soaked in hot water for 1 hour beforehand.
Ingredients
- Poultry 5 lbs
- Turnips 2 pieces
- Celery stalk 2 pieces
- Semi-Smoked Sausage 0 oz
- Rosemary 2 sprigs
- Shimeji mushrooms 6 pieces
- Port Wine 5 fl oz
- Salt to taste
- Olive Oil to taste
Step-by-Step Guide
Step 1
Chop the carrots and celery into large pieces.
Step 2
Place the chicken, carrots, celery, and bacon in a large pot, cover with water, and bring to a boil.
Step 3
Reduce the heat and simmer for 1 hour, skimming off any foam occasionally.
Step 4
Add the sprigs of rosemary, shiitake mushrooms, and port wine (optional), and simmer for another 10-15 minutes, then remove the chicken.
Step 5
The chicken will be perfectly cooked and great for salads or sandwiches, or you can slice the meat and add it to the soup.
Step 6
Season the broth with salt and strain it into bowls, being careful not to stir too much to keep it clear.
Step 7
Place pieces of chicken and mushrooms in each bowl and drizzle with a small amount of extra virgin olive oil.
