Description
This Georgian recipe has long been dear to us: red, bright, spicy, with a distinct aroma of cloves, Gurian cabbage is that flavorful and colorful accent that will definitely not be out of place on the New Year's table. The recipe is quick: from preparing the marinade to serving the cabbage takes only 16 hours. What to serve it with? Gurian cabbage can complement any meat platter, assist a roasted goose or piglet (the vinegar marinade helps with any fatty food), or simply leave the dish with cabbage, cut into large beautiful watermelon-shaped pieces, appetizingly pink on the laid table among other appetizers. And if among the drinks there is not only champagne but also homemade infusions, then it will be wonderful.
Ingredients
- White Cabbage 10 lbs
- Beetroot 5 lbs
- Garlic 0 oz
- Vinegar essence 15 fl oz
- Ground clove 2 pieces
- Salt 5 oz
- Water 5 qt
- Sugar to taste
Step-by-Step Guide
Step 1
Remove the outer leaves and tough parts from the cabbage.
Step 2
Cut into 3 cm squares.
Step 3
Peel and wash the beetroot.
Step 4
Cut it into strips.
Step 5
Prepare the marinade. Boil the drinking water.
Step 6
Add salt, sugar, garlic, cloves, and vinegar.
Step 7
Layer the cabbage and beetroot.
Step 8
Pour the marinade over.
Step 9
Let it steep for 12–16 hours.
Step 10
Serve.
