Grilled Peaches with Yogurt
Ingredients
- Donut Peaches 20 oz
- Butter 0 oz
- Peach Juice 5 fl oz
- Sugar 5 oz
- Cognac 0 fl oz
- Yogurt powder 5 oz
- Honey 0 oz
- Passion Fruit 1 piece
- Mint 2 sprigs
- Nuts 0 oz
- Lime 1 piece
Step-by-Step Guide
Step 1
Cut the peaches in half and remove the pits.
Step 2
Place the peaches on the grill and roast them until they have nice grill marks on both sides.
Step 3
For the caramel, pour the sugar into the bottom of a pan and turn on the heat. The sugar should melt; do not stir, the heat will do the work.
Step 4
When the sugar has melted, pour in the cognac and ignite it. The alcohol will evaporate, and the caramel will acquire a pleasant aroma.
Step 5
When the cognac stops burning, add the butter.
Step 6
Place the peaches in the pan with the caramel and sauté them for 3 minutes on both sides. The peaches should be soft on the outside but retain firmness inside. Transfer them to a clean plate and cover with foil to keep warm.
Step 7
Pour the peach juice into the pan with the caramel and reduce everything together until it becomes a sauce.
Step 8
At the end, add the lime juice, mix, and remove the caramel from the heat.
Step 9
Mix the yogurt with the honey.
Step 10
Cut the passion fruit in half, scoop out the pulp with a spoon, and add it to the yogurt with honey.
Step 11
On the bottom of a plate, spread the yogurt sauce, then place the grilled peaches on top.
Step 12
Drizzle with caramel, and garnish with nuts and mint leaves.
Step 13
Serve with coffee brewed in a Polaris PACM 2080AC IQ Home coffee machine.
