
Grilled Peaches with Gorgonzola and Honey

Description
You can use canned peaches instead of fresh ones, depending on the season.
Ingredients
- Donut Peaches 4 pieces
- Goat cheese 5 oz
- Lime 1 piece
- Honey 5 oz
- Brown Sugar 0 oz
- Mint 4 stalks
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Submerge the peaches in boiling water for one minute, then cool them down and remove the skin. Cut them in half and pit them.
Step 2
Sprinkle the peach halves with sugar and grill them on both sides (about one and a half minutes per side). Place a piece of gorgonzola cheese on each half and season with freshly ground pepper.
Step 3
Stirring constantly, heat honey with lime juice in a saucepan until it caramelizes (it will start to foam like butter in a pan). Drizzle this sauce over the peaches and garnish with mint leaves.
