Ingredients
- Olive Oil 3 tablespoons
- Onion 1 head
- Celery salt 10 oz
- Chicken Broth 0 qt
- Watercress 5 oz
- Salt to taste
- Ground Black Pepper to taste
- Olive Oil to taste
Step-by-Step Guide
Step 1
Heat 3 tablespoons of olive oil in a pot over medium heat. Add finely chopped onion and sauté until soft, but do not let it brown. Then add peeled and chopped celery root and sauté for another 3-4 minutes. Pour in the broth, bring to a boil, reduce heat, and simmer for 15-20 minutes until the celery is tender.
Step 2
Then add the watercress and immediately remove from heat. Blend the soup in batches until smooth. Season with salt and pepper. Optionally, add olive oil.
