Ingredients
- Lemon 2 pieces
- Mixed tomatoes of different colors 25 oz
- Sugar 1 cup
- Meyer Lemon Juice 1 tablespoon
- Coarse Salt ½ teaspoon
- Water ¼ cup
Step-by-Step Guide
Step 1
Cut the lemons lengthwise into 4 pieces, then slice them thinly. Transfer to a pot, cover with water, bring to a boil, and drain.
Step 2
Dice the tomatoes into small cubes and transfer them to a saucepan. Add the lemons, sugar, lemon juice, salt, and water. Bring to a boil and simmer on low heat for about 30–35 minutes, until the lemons become translucent and the mixture thickens.
Step 3
Remove from heat and let cool.
