Ingredients
- Nettle 15 oz
- Ramsons 4 stalks
- Shallot 2 pieces
- Butter 0 oz
- Potato 10 oz
- Chicken Broth 15 fl oz
- Salt to taste
- White Pepper (whole) to taste
- Nutmeg to taste
- Sour Cream 4 tablespoons
- Chicken Egg 2 pieces
Step-by-Step Guide
Step 1
Wash the nettle leaves, place them in a sieve, and pour 500 ml of boiling water over them. Spinach can also be used. Wash the ramsons and cut them into strips. Peel and dice the shallots.
Step 2
Sauté all the shallots in butter until translucent. Add half of the nettle leaves and sauté briefly. Pour in the broth and bring to a boil.
Step 3
Wash, peel, and dice the potato, add it to the broth, and cook for 20 minutes. Add the remaining nettle leaves and blend until smooth.
Step 4
Reheat the soup, season it, add the sour cream, boiled eggs, and serve immediately.
