Green Borscht with Rice
Ingredients
- Salad Potatoes 5 pieces
- Campbell's Beef Broth 5 qt
- Rice 4 tablespoons
- Carrot 1 piece
- Onion 1 piece
- Farm fresh eggs 3 pieces
- Sour Cream 5 tablespoons
- Scallions 1 bunch
- Sorrel 1 bunch
- Parsley 1 bunch
- Dill 1 bunch
- Salt to taste
Step-by-Step Guide
Step 1
Add the sliced potatoes and rinsed rice to the boiling broth (or boiling water).
Step 2
When the potatoes are ready, add the chopped green onions, diced boiled eggs, sautéed onions, and sautéed grated carrots. Season with salt to taste.
Step 3
Add half a cup of sour cream, then immediately add all the chopped herbs (a large bunch of sorrel, parsley, and dill) and turn off the heat. The soup should sit for 30 minutes. When serving, add sour cream to the bowls.
