
Green Bean Puree Soup

Description
This soup can also be made with canned green beans. After opening the can, set aside some beans for garnish, and blend the rest with the juice and potatoes, then continue cooking as described above.
Ingredients
- Butter 3 tablespoons
- Salad Potatoes 20 oz
- Chinese green beans 25 oz
- Milk 15 fl oz
- Water 40 fl oz
- Salt to taste
Step-by-Step Guide
Step 1
Clean and wash the green beans, set aside a quarter for garnish and cut into diamond shapes; pass the rest through a meat grinder.
Step 2
Peel and wash the potatoes, slice them, place in a pot, add the minced green beans, salt, 1–2 tablespoons of butter, pour in 4–5 cups of hot water, cover, and cook. When the potatoes are ready, strain the mixture through a fine sieve.
Step 3
Dilute the resulting puree with hot milk and season with butter. When serving, add the cooked green beans reserved for garnish to the soup. Serve croutons separately.
