Greek Pumpkin Pie with Feta and Sage (Kolokithopita)
Ingredients
- Chestnut puree 2 cups
- Ground Black Pepper to taste
- Farm fresh eggs 2 pieces
- Feta cheese ½ cup
- Chopped Sage Leaves to taste
- Olive Oil ¼ cup
- Phyllo Dough 12 sheets
Step-by-Step Guide
Step 1
In a bowl, mix the pumpkin puree, crumbled feta, and eggs. Season with pepper and add a small amount of chopped sage.
Step 2
Preheat the oven to 355°F (350 degrees Fahrenheit).
Step 3
Grease a 20x20 cm (8x8 inch) baking dish with olive oil.
Step 4
Brush a sheet of phyllo dough with olive oil and lay it in the dish. Repeat to create 6 layers.
Step 5
Next, spread the filling on top of the dough and smooth it out.
Step 6
Make another 6 layers of dough, brushing them with olive oil.
Step 7
Bake the pie until cooked through and golden brown for 30-40 minutes.
