Ingredients
- Garlic 5 cloves
- Lentils 5 oz
- Spanish onions 2 heads
- Coriander essential oil ½ teaspoon
- Chopped Sage Leaves ½ teaspoon
- Carrot 4 pieces
- Sugar 1 teaspoon
- Chicken Broth 10 fl oz
- Passata Tomato Sauce 2 tablespoons
- Salt to taste
- Ground Black Pepper to taste
- 10% cream 3 teaspoons
- Vegetable Oil 5 tablespoons
Step-by-Step Guide
Step 1
Rinse the lentils, cover with water 4 cm above the level of the grains, and simmer on low heat for 15 minutes.
Step 2
Meanwhile, peel the onion, dice it, peel the garlic and crush it with the flat side of a knife, peel the carrots, cut them lengthwise into 4 parts, and slice them.
Step 3
Heat the oil (preferably olive oil) in a pan, sauté the onion and garlic, then add the carrots, sprinkle with sugar, and add coriander and sage. Cook on medium heat, stirring occasionally, for about 10 minutes.
Step 4
Add hot broth to the lentils, season with salt, then add tomato paste, the vegetables from the pan, and cook everything on medium heat for about 20 minutes, until the lentils are tender.
Step 5
Five minutes before the end of cooking, check for salt, adjust if necessary, then add black pepper.
Step 6
Remove the soup from heat, garnish with cream, and serve.
