Grapefruit Clafoutis

Ingredients

  • Red Grape Juice 3 pieces
  • Sugar ½ cup
  • 10% cream 5 fl oz
  • Milk 0.7 cup
  • Honey 3 tablespoons
  • Cognac 1 tablespoon
  • Salt a pinch
  • Farm fresh eggs 3 pieces
  • Wheat Flour 0.7 cup

Step-by-Step Guide

Step 1

Peel the grapefruits with a knife, removing all the skin and pith. Using a sharp knife, cut the segments over a bowl to catch the juice.

Step 2

Beat the eggs, add sugar and salt, and beat again.

Step 3

Add the milk and cream, and beat again. Gradually add the flour.

Step 4

Mix well.

Step 5

Preheat the oven to 355°F (350 degrees Fahrenheit).

Step 6

Grease the bottom of a baking dish with butter and dust with flour. Shake off the excess flour.

Step 7

Place the grapefruit segments at the bottom of the dish. Pour the batter over the top.

Step 8

Put it in the oven. Bake for 40 minutes until cooked through.

Step 9

Meanwhile, prepare the sauce.

Step 10

In a saucepan, heat the grapefruit juice with honey and a tablespoon of cognac.

Step 11

Bring to a boil and reduce by about half. Turn off the heat.

Step 12

Remove the clafoutis from the oven and drizzle with the sauce. Let it soak.

Step 13

It can be served either hot or cold.
