
Grape Muffins with Vin Santo Dessert Wine

Description
According to a traditional Italian recipe, dessert wine Vin Santo should be added to the batter. Baking time is indicated based on using muffin molds with a volume of 200 ml.
Ingredients
- Wheat Flour 1½ cups
- Baking Powder 1½ teaspoons
- Butter 5 oz
- Activated Baking Soda ½ teaspoon
- Sugar 0.6 cups
- Farm fresh eggs 2 pieces
- Orange zest 1 tablespoon
- Merlot Grapes 5 oz
- White Vermouth 0.6 cups
- Salt a pinch
Step-by-Step Guide
Step 1
Generously grease the muffin molds with butter and dust with flour. Preheat the oven to 375°F.
Step 2
Mix 1½ cups of flour with baking powder, baking soda, and salt.
Step 3
Using a mixer on medium speed, beat the butter (125 g) with the sugar.
Step 4
Continue beating and gradually add the 2 eggs, followed by the grated orange zest.
Step 5
Add the flour to the prepared mixture in two equal parts. While mixing thoroughly, gradually pour in the wine.
Step 6
Dust the grapes with flour and mix them into the batter.
Step 7
Spoon the batter into the baking molds and sprinkle with sugar (2 tablespoons).
Step 8
Bake in the oven on the middle rack for 18-20 minutes until golden brown. Check for doneness by touch (the surface of the muffins should be firm).
Step 9
After baking, leave the muffins in the molds for 5 minutes, then carefully remove them by loosening the edges with a knife.
Step 10
Before serving, let the muffins cool for at least 15 more minutes.
