Grape and Walnut Cake

Ingredients

  • Sugar 1 cup
  • Wheat Flour 1 cup
  • Chocolate eggs 4 pieces
  • Vanillin a pinch
  • 20% Sour Cream 1 cup
  • Powdered Sugar to taste
  • Walnuts to taste
  • Seedless Green Grapes 0 oz
  • Honey 2 tablespoons
  • Liquid dark chocolate 1 bar
  • Cream 22% to taste

Step-by-Step Guide

Step 1

First, we make a classic sponge cake. Carefully separate the egg whites from the yolks. Start beating the egg whites at the lowest speed of the mixer. Gradually add sugar and vanillin to the egg whites while continuing to beat. Beat until the egg white mixture becomes white and thick (as some chefs check, you should turn the bowl with the egg whites upside down over your head, and they should not fall on you). Next, beat the yolks separately. Gently fold the egg whites into the yolks with a wooden spatula (very slowly and carefully, without getting carried away).

Step 2

Remove the mixer and begin to sift the flour into the bowl with the egg whites and yolks, gently mixing with a spoon from the bottom up. Pour the prepared batter into a greased baking pan and place it in a preheated oven at 190-200°C (375-390°F) for 20-25 minutes. Check for readiness with a toothpick (insert it into the cake, and if it comes out dry, the sponge is ready). Remove the pan, turn the sponge cake onto a plate (or rack, or towel) and let it cool.

Step 3

Take a bar or half a bar of chocolate (I prefer milk chocolate, not dark) and melt it in a water bath. Add cream and continuously stir until the mixture thickens. Whip the sour cream and powdered sugar with a mixer until it reaches a creamy consistency.

Step 4

Now we start assembling the cake. Cut the sponge cake in half, resulting in 2 layers. Spread sour cream frosting on top of one layer and drizzle with 1 tablespoon of honey. Cover with the second layer and do the same. Spread melted chocolate on the top layer (and on the sides of the cake as well), sprinkle with walnuts, and decorate with grapes (I used seedless raisins). The cake is ready, enjoy your meal!
