Grape and Blue Cheese Pie
Baking and Desserts • European
Description
This is a great pie that works well as a snack with wine. It can be served warm or cold. It can also be enjoyed for breakfast as toast with soft cheese and figs. The dough here turns out moist and sweet-salty, while the grape skins dissolve. It's best to use firm, small seedless grapes or to remove the seeds from larger grapes beforehand. Instead of blue cheese, you can use Gorgonzola. Grapes can be replaced with finely chopped pears. If blue cheese isn't suitable, it can easily be substituted with homemade cheese like Adyghe or Suluguni, mozzarella, or any other soft white cheese. A baking dish for cakes is recommended — long, narrow, and with high sides.

Step 3
Thoroughly cream the butter and sugar together.

Add the eggs to the butter-sugar mixture.
Step 5
Mix well (with a spoon, whisk, or mixer).
Step 6
Add the cream and pour in the milk to the mixture.
Step 7
Beat everything together with a mixer until smooth.
Step 8
Continue mixing with the mixer, gradually adding the flour.
Step 9
Add the baking powder to the dough and mix.
Step 10
Detach the grapes from the stems and add them to the dough.
Step 11
Gently mix.
Step 12
Take the cheese out of the refrigerator and cut it into cubes (not too small).
Step 13
Add the cheese to the mixture with the grapes.
Step 14
Mix everything together thoroughly and carefully.

Pour the mixture into the baking dish and spread it evenly.
Step 16
Crush the walnuts on top.

Bake in the oven for 40 minutes at 355°F.

Cool the pie, cut into portions, and serve.
