Ingredients

  • Red Lentils ½ cup
  • Pumpkin puree 1 cup
  • Oat flakes ½ cup
  • Whole Wheat Flour ¼ cup
  • Baking Powder 1 teaspoon
  • Salt a pinch
  • Asafetida a pinch
  • Turmeric a pinch
  • Ground Ginger a pinch
  • Paprika a pinch
  • Ground coriander a pinch
  • Ground Cumin a pinch
  • Olive Oil 2 tablespoons

Step-by-Step Guide

Step 1

Soak the lentils in water for several hours or overnight. Then drain, rinse, and dry them. Grind in a blender until it reaches a flour-like consistency.

Step 2

Grind the oat flakes into flour.

Step 3

Mix the resulting lentil flour with the other ingredients.

Step 4

Line a baking dish with parchment paper or grease it with oil, transfer the mixture into the dish, and smooth the surface. The layer should not be more than 1.5 cm high.

Step 5

Bake the cake in a preheated oven at 355°F for about 30 minutes. Let it cool slightly, then remove from the dish and cut as desired. Serve with avocado mousse or any hummus.
