
Gougeres (Cheese Puffs)

Description
The puffs can be frozen for up to 2 months; reheat for a few minutes in a hot oven.
Ingredients
- Milk 5 fl oz
- Water 5 fl oz
- Butter 5 oz
- Salt a pinch
- Ground Nutmeg a pinch
- Wheat Flour 5 oz
- Gruyère cheese 5 oz
- Large eggs 4 pieces
Step-by-Step Guide
Step 1
Preheat the oven to 390°F.
Step 2
Line a baking sheet with parchment paper.
Step 3
In a saucepan, combine water, milk, butter, and salt, and bring the mixture to a boil.
Step 4
Without removing from heat (on low heat), gradually add the sifted flour, and cook the dough until it reaches a smooth consistency. Stirring, cook on low heat until the dough is smooth and pulls away from the bottom of the saucepan. This will take about 2 minutes.
Step 5
Let the dough cool for about 1 minute.
Step 6
Beat the eggs into the dough: one at a time, mixing them very well into the dough.
Step 7
Add 100 grams of cheese, constantly stirring the dough. Then season with salt and pepper to taste and add a pinch of nutmeg.
Step 8
Using any convenient method (teaspoon, pastry bag, slightly damp hands), pipe balls onto the baking sheet (choose the diameter to your liking; the size of regular profiteroles works best). Space the balls 2 cm apart, as they will expand during baking.
Step 9
Sprinkle the tops of the puffs lightly with grated cheese — 30 grams.
Step 10
Bake for about 25 minutes or until golden brown.
