  • Wheat Flour 1½ cups
  • Sugar 2 cups
  • Salt a pinch
  • Butter 5 oz
  • Black Currant Jam 3 tablespoons
  • Gooseberry 3 cups

Step-by-Step Guide

Step 1

For the dough, mix the flour, 2 tablespoons of sugar, and salt in a bowl. Cut the butter into small pieces and rub it into the flour. Add 2–3 cups of ice water, stir, and knead the dough. Form the dough into a ball and wrap it in plastic wrap. Place it in the refrigerator for 30 minutes.

Step 2

Preheat the oven to 390°F. Grease a baking dish (25 cm in diameter) with butter. Roll out the dough and place it in the dish.

Step 3

For the filling, spread the jam over the dough and arrange the gooseberries on top. Sprinkle with half a cup of sugar.

Step 4

Bake the tart for 10 minutes, then reduce the temperature to 355°F and continue baking until the gooseberries start to burst and turn golden, about 30–40 minutes.

Step 5

Remove the tart from the oven, let it cool, and serve with whipped cream.
