Ingredients
- Wheat Flour 10 oz
- Water 2 tablespoons
- Onion 3 pieces
- Brown Sugar 1 tablespoon
- Balsamic Vinegar 1 tablespoon
- Butter 1 tablespoon
- Chicken Egg 2 pieces
- Cheshire Cheese 5 oz
- Whole egg 1 piece
- Cream 5 fl oz
- Milk 0 fl oz
- Thyme 3 teaspoons
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Prepare the base. In a food processor, blend the flour and butter until crumbly. Add the yolk and water and form the dough into a ball. Wrap the dough in plastic wrap and flatten it into a disc. Place in the refrigerator for 30 minutes.
Step 2
Roll out the chilled dough to a thickness of 5 mm and place it in a pie dish. Put the dish with the dough in the refrigerator for 15 minutes.
Step 3
Preheat the oven to 355°F. Cover the dough with parchment paper and add some weights. Place the dish in the oven and bake for 10 minutes. Then remove the peas or beans (depending on what you used) and the paper, and return the base to the oven for another 5-7 minutes until golden brown. Let cool.
Step 4
Heat a skillet over medium heat and add the butter. Once the butter is sizzling, add the sliced onion. Sauté for about 10 minutes over low heat. Add the vinegar, chopped thyme, and sugar. Cook for another 10 minutes. Let cool.
Step 5
In a bowl, whisk together the eggs, yolk, cream, and milk. Add spices to taste. Place the onion in the base, evenly cover with grated cheese, and pour the egg-milk mixture over it. Finally, sprinkle with the remaining thyme.
Step 6
Bake for 15-18 minutes until the filling is set.
