Ingredients
- Chicken fillet 30 oz
- Salt ½ teaspoon
- Ground Black Pepper ¼ teaspoon
- Dijon Mustard 3 tablespoons
- Mayonnaise 0 oz
- Coconut flakes 6 cups
- Rice Vinegar for Sushi 1 tablespoon
- Apricot Jam 5 oz
Step-by-Step Guide
Step 1
Preheat the oven to 445°F.
Step 2
In a large bowl, mix the sliced chicken, salt, pepper, 0.25 cups of mustard, and 0.25 cups of mayonnaise.
Step 3
In a food processor, crush the cornflakes into crumbs. Transfer to a bowl.

Coat each piece of chicken in the cornflakes so that it is fully covered and place on a baking sheet.

Bake for about 15 minutes until cooked through and crispy.
