Ingredients
- Black Tomatoes 5 oz
- Lentils 5 oz
- Snap Peas 5 oz
- Rutabaga 0 oz

- Orange Bell Peppers 1 piece
- Herbs 1 bunch
- Ground Nutmeg ¼ teaspoon
- Cayenne Pepper ¼ teaspoon
- Goat cheese 5 oz
- Salad Potatoes 25 oz
- Tomatoes 10 oz
- Butter 0 oz
- Milk 2 tablespoons
- Salt to taste
- Grated Pecorino Pepato Cheese 0 oz
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Soak the beans overnight.
Step 2
Place the beans (without liquid), peeled peas, and lentils in a pot. Pour in 725 ml of boiling water, add salt, cover, and simmer for 50-60 minutes. Mash the cooked legumes with a fork.
Step 3
Prepare the potatoes in a steamer.
Step 4
Chop the carrot, rutabaga, celery root, seedless bell pepper, and onion in a food processor. Sauté them in butter for 10-15 minutes until soft.
Step 5
Blanch the tomatoes in boiling water for 15-30 seconds, remove from water, and peel. Cut the flesh into slices.
Step 6
Combine the vegetables with the legumes, add herbs, spices, and season with salt and pepper. Place the mixture in a buttered baking dish. Layer the tomato slices on top.
Step 7
Add butter, milk, and goat cheese to the cooked potatoes and mash until smooth. Season with salt and pepper and spread over the other ingredients in the dish.
Step 8
Sprinkle with Parmesan and bake for 20-25 minutes at 375°F until golden brown.
