Step 1
In a blender, turn the cookies into coarse crumbs. Grate the goat cheese and mix it with maple syrup and grated ginger root.
Step 2
Cut the quince into large wedges, place them in a buttered baking dish, and put it in the oven. After twenty minutes, remove it, sprinkle the quince with sugar, a mixture of goat cheese, maple syrup, and ginger, and then top it with breadcrumbs — return the crumble to the oven for another fifteen minutes.
