Gingerbread Men with Cocoa
Ingredients
- Wheat Flour 20 oz
- Honey 10 oz
- Butter 5 oz
- Sugar 5 oz
- Powdered Sugar 10 oz
- Cocoa Powder 0 oz
- Chicken Egg 1 piece
- Meyer Lemon Juice 2 tablespoons
- Egg white 1 piece
- Baking Powder 1 teaspoon
- Gingerbread Spice Mix 1 teaspoon
Step-by-Step Guide
Step 1
Heat honey, sugar, butter, cinnamon, and nutmeg until the sugar dissolves. The mixture should not boil, just warm up. Remove from heat and let cool slightly.
Step 2
Mix flour and baking powder with the honey mixture, vanilla, cloves, ginger, egg, and cocoa. Knead until smooth, roll into a ball, wrap in plastic wrap, and refrigerate for 1.5–2 hours.
Step 3
Take portions from the refrigerator, roll out, and cut out shapes using a paper template or cookie cutter. Place on a baking sheet lined with parchment paper and bake for 15–20 minutes at 355°F. Let cool.
Step 4
Whip the egg white until foamy, gradually adding powdered sugar while whipping. When the mixture reaches a thick creamy consistency, add lemon juice. You can add food coloring to part of the icing. Decorate the gingerbread.
